This is a great way of using up leftover sweet potato mash. Or, when you’re making your sweet potato fries, just do half the quantity you would usually do, and mashed the rest up and use it in this recipe!
Ingredients
1 sweet potato, mashed
50g grated cheddar
1 medium egg, beaten
Handful cooked peas
Method
1) Preheat oven to 200c and grease a 6 hole muffin tin
2) Mix all ingredients together in a bowl
3) Evenly divide mixture up into the muffin tin
4) Bake for 30 minutes, until golden on top
This is a very adaptable recipe; you can use whatever veg you like in this! You could use normal potatoes in this recipe if you’d prefer.
