I make these banana and apricot mini loaves in little loaf cases, but you can use mini muffin cases (keep the baking time the same) or a larger loaf tin to make a big loaf (add 20 minutes to the baking time)

Ingredients
2 medium bananas, mashed
1 medium egg, beaten
100g self-raising flour
50g unsalted butter
1 tsp cinnamon
75g chopped dried apricots

Equipment
Bowl
Mixing spoon
5x mini loaf cases

Instructions
Pre-heat your oven to 180c
Mix the flour, cinnamon and butter together in a bowl
Mix in your chopped fruit by hand
In a separate bowl, mix bananas and egg together
Combine all ingredients together
Add 2 tablespoons of the mixture to each mini loaf case
Put in the oven for 60 minutes, or until a skewer comes out of the centre clean
Allow to cool and then serve

Storage
Can be kept in an airtight container for up to a week

Top tip
I actually used my Nutribullet to mix this recipe (flour, butter & cinnamon added first, a few short pulses mixes those up.  Then add the bananas and egg to the same container, and pulse a few more times until combined)

It’s by no means necessary for the success of the recipe, and it would be absolutely fine if you used a bowl, or a food processor etc etc.  I do love my Nutribullet, and like getting my money’s worth from it. 🙂
