Brownies are supposed to be an indulgent treat… can they really be low fat?? Well, this recipe ticks both boxes (and the low-sugar box too, if you use a sweetener… and don’t dust the top with icing sugar… haha). These are low fat and delicious; you would never guess these were under 100 calories per brownie.
Ingredients
50ml vegetable/sunflower oil
150g caster sugar / granulated sweetener
2 medium free-range eggs
1 teaspoon vanilla extract
50g cocoa powder
1/2 teaspoon baking powder
80g plain flour
Instructions
- Preheat oven to 180c
- In a large bowl, mix together the sugar and the oil. Add the eggs and vanilla and keep stiring until it turns a paler colour and is well mixed
- Carefully add the cocoa powder with the baking powder and flour, and mix well
- Combine both mixtures
- Line a 20cm x 20cm baking tin with greaseproof paper and pour the batter into the tin
- Bake for approx 15 mins, or until you can insert a skewer in and it comes out virtually clean
