Couscous Cakes

This is a perfect way to use up yoghurt that’s getting close to it’s use-by date.  Couscous is a great staple to have in your cupboards; it’s so cheap, quick, healthy and easy to make up.

100g couscous, made to packet instructions
200g yoghurt (any flavour… I used raspberry)
1/2 teaspoon mixed spice
25g sultanas/dried fruit
5g granulated sweetener

Method
1) Pre-heat your oven to 200c
2) Put all ingredients in a bowl, and combine
3) Divide mixture up into silicone muffin cases, and level with the back of a spoon
4) Bake for 35 minutes, or until golden on top

This recipes makes 6 decent sized cakes.

These can be served warm or chilled.  Delicious either way!
