Almost pizza-like in texture, these courgetti bread bites are delicious!  Great for picnics in the park (weather permitting!)

150g grated/spiralized courgette
50g grated cheddar
50g plain flour
1 medium egg, beaten
Pepper to taste

1) Pre heat oven to 180C
2) Add flour and cheddar to a bowl, and mix.  Add beaten egg, and mix again
3) Remove excess moisture out of the courgette by placing it on a clean cloth and squeezing
4) Add courgette to the other ingredients and mix well
5) Line a baking tray with baking paper
6) Pour mixture onto the baking paper, flattening it down slightly
7) Bake for 15-20 minutes, until crispy on the sides

I prefer to make this as one big flatbread-type thing and slice when cooled.  But you can make this as individual patties if you like by dividing the mixture up, rolling into balls and flattening down (reduce the baking time slightly to 12 minutes)
