Blueberry Mug Cake

After several attempts (it’s a hard life, tasting mug cakes!  Haha!) this is the tastiest one i’ve come up with.  It’s a delicious treat, which is super easy; this single serving will satisfy you when you’re craving cake!Blueberry Mug Cake

Ingredients
2 tbsp self raising flour
3 tsp granulated sweetener (like Total Sweet) / sugar
1/2 tbsp coconut oil
4 tbsp milk
10 blueberries

Instructions
Put the flour and sweetener into your favourite mug and mix.
Then add the coconut oil and milk and mix again.  The mixture should be fairly thick.
Add the blueberries and poke them down a little so they are just poking through.
Put in the microwave for approx 90 seconds (microwaves vary, so keep an eye on it!).
The sponge should have a slight spring to it when you take it out.
Leave to cool slightly and enjoy.

If you don’t have coconut oil, you can use vegetable oil.  Just use 1 tbsp vegetable oil, and use 3 tbsp milk instead of 4.
