This makes 6 small fishcakes – perfect for dinner one night, and lunch the day after!  This is great for the whole family – just increase the quantity as needed.fishcakes

Ingredients
1 large potato, peeled and cut into chunks
1/2 can tuna
1 egg, beaten
2 slices of bread, blitzed into breadcrumbs (I used my Nutribullet to do this)
Seasoning (optional)

Instructions
Cook potato until tender, then drain and mash
Add tuna to the potato and stir.  Season with pepper if using.
Shape the mixture into patties
Coat each patty in the beaten egg, then breadcrumbs
Heat a non stick frying pan, and spray with oil
Fry each patty for around 5 minutes until golden, flipping halfway through

This is a very basic recipe, so make it your own!  You can add some peas, or maybe chop up an onion and add that too.  This is a really great store cupboard recipe and so quick to do.  A great dish for little hands, but also ace for grown-ups too.
