Fun for kids to eat, and great for hand/eye co-ordination for your little one.  They’re an interesting new texture, with some bits crispy and some bits curly!

Ingredients
Sweet Potato
Olive Oil

Equipment
Spiralizer
Baking tray
Greaseproof paper
Bowl
Stiring Spoon

Instructions
Pre-heat your oven to 180C
Peel sweet potato and chop a little off each end so they’re flat
Put sweet potato through your spirilizer using the largest attachment
Put the sweet potato in a bowl and add a glug of oil to lightly coat it.  Add pepper to taste and stir.
Lay the spiral sweet potato onto the baking tray
Bake for 20-25 minutes, giving it a little shake halfway through cooking
Allow to cool, and serve!

Storage instructions
These can be kept in the fridge for a couple of days, and can be reheated/enjoyed cold
